Macadamia, Mango & Coconut Tart

INGREDIENTS

145g (1 cup) roasted salted macadamias

50g (1/2 cup) rolled oats

30g (1/2 cup) moist coconut flakes

1 tablespoon coconut sugar

75g butter, melted

2 mangoes, peeled, thinly sliced

2 passionfruit, halved

Toasted flaked coconut, to serve

HOLY SMOKES people, get yourselves to this great new Pokolbin hot spot, Yellow Billy, a restaurant that really took us by surprise, it was a very pleasant surprise at that!

The unique flavours are produced with the use of a purpose-built open fire/smoke house which produces tender, juicy meats with a fantastic smokiness that is absolutely delicious.

A visit to the Piggs Peake winery is a must when you’re next visiting the Hunter Valley.  The awesome staff at the cellar door offer a unique tasting experience, showcasing what can only be described as a huge array of wines.  From sparkling wines to ports and luscious dessert wines, there is certainly a wine for every palate.

Many of the team hosting your tasting experience are also involved in the winemaking process so not only will your tasting be fun it will certainly be informative. 

Broke Estate Wines

Broke Estate Vineyard, located in the beautiful Broke Forwich region of the Hunter Valley, is a labour of love for the Tolson family, who produce a boutique range of wines they are proud to introduce you to.

The 2016 vintage was the first in many years and was the result of years of dedication and hard work for Max, his family and many of their friends!  The vines were slowly re-established and produced small yields of Shiraz, Barbera and Chardonnay grapes which were harvested, mostly by hand.
